I had some issues setting up the email (as you know). Key to this was that some email servers worked perfectly and others just rejected the emails as they didn't like how the email headers was set up on the web server.
This was a bit of a PITA to sort out with tail following the server output and me trying different addresses which required logging out and back into Hubzilla to test via different accounts.
My suggestion is that the test mail plugin could expose the admin address in a field and if you wanted to change that then you could just write over it.
